looking for a woman in her 30s (or at least looks to be in her 30s), tall, dark hair, dark eyes, a refined face, with muscles -- she's a scholarly sort who also works out. helpful if she's in historical/fantasy costumes or even 1920s, but I doubt that exists, so I'll take anything.

If not for the eye color (though in the right lighting it's not an issue) and muscles, I'd suggest Essie Davis as Phryne Fisher. Might be worth looking at her anyway?

Have you looked at Kabru from Dungeon Meshi/Delicious in Dungeon? Maybe Mugen from Samurai Champloo? Or Tyki Mikk from D.Gray-man (though some minor photoshopping might be required). Maybe Rajendra from The Heroic Legend of Arslan, though his hair's kind of short.

Also, if you don't mind dipping into fanart, there's a lot of genderswapped Esmeralda fanart from Disney's Hunchback. Or maybe Thorns from Arknights.

If you don't mind a much less horrifying scar, this one across his eye, use Grimjack. You'll find two versions, one an older man with black hair, named John Gaunt, the other a younger one with red hair, by the name of Jim Twilley. They're the same guy, reincarnation's involved, but the redhead has plenty of expressions to snatch up.

For someone a bit more famous, but unscarred, go for John Constantine. Specifically the Vertigo run. A lot of that has him cleanshaven, but a lot of it has him unshaven, and he'll probably be less instantly recognizable than the newer comics. Also, the Vertigo run had him age in real time, so he was in his 50s or 60s by the time the final issue rolled around. And as time rolled on, it just became harder for him to look well-groomed.

looking for a male pb who looks to be in his 20s-early 30s, caucasian, with medium to long blond or chestnut hair. any medium is fine, though live action is preferred. historical settings or things i can at least handwave to be historical would be great.

Edward Atterton in the Mists of Avalon (assuming you can get over the connection to Marion Zimmer Bradley) for an earlier Medieval period.

I'm looking for a woman in her late 20s/early 30s, lean, with short dark hair, tanned skin. bonus points if she's in suits and/or a dark (leather) jacket and wears sunglasses. i'd prefer live-action (but I can work with anything, there are probably better options in video games). Kristen Stewart is close but I want someone not quite as recognizable.
