It can be an acquired taste for sure, and yeah like another anon said above everybody tastes things differently and have different preferences to suit their tastebuds, so alcohol might just never be for you.

I went from drinking only super sweet cocktails to getting really into craft beers as I got older and my taste for sweet things declined. For me, the bitterness is actually part of the charm because it's a flavor mingled with lots of other flavors, rather than a taste to avoid? The sharpness of it is super refreshing to me, and in terms of liquor I also tend to favor sharp crisp liquors like gin and vodka.

That said I could never get into wine and have no palate whatsoever for it, can't stand whiskey and rum, so if it weren't for fun n frisky beers I probably wouldn't drink much either lol

speaking as someone who's basically the reverse of you: it's honestly cool how different the taste profiles are!
I have never been able to stand beer, it makes me kinda nauseated if I drink too much (in the name of Acquiring the Taste) but I will gladly drink whiskey neat and enjoy the flavor a lot. when I add things to it I keep them minimalist bc, like you said, the bitterness is its own note and I think masking it is both a waste and potentially dangerous, esp when making a drink for someone else.
