I'm not going into trying to figure out exactly how many calories are in what you're eating but it looks ridiculously low (900-1200 from glancing at it.) It's very possible you aren't getting enough calories for your needs, because people forget there's a line between so few calories you start dying and few enough calories that your body just hoards and stores everything you do give it, and that line is in different places for different people. Some people gain weight when they start dieting (like myself) because they're going below their calories needed, rather than changing what they eat.
And like anon above me said (and you mentioned in your own comment) you probably also need more variety. As healthy as fruits and vegetables (and fish) are, they're just not going to give you everything you need.
