Joseph thinks a lot more than he lets on and often plays the fool to get himself out of trouble. In the times in which he doesn't actually know what the heck is going on, it seems like he'll play up whatever little knowledge he has to think himself out of his sticky situation.

Araki doesn't fill the gaps much what happens to Joseph in between BT and SC except in broad terms, but you can assume that he got more committed to having a "normal" life since that's the right that he won by defeating the Pillar Men not just for him, but for his family.
