In terms of specifics, something that's really important irt them is how bad she is at really saying what she feels, how she feels, etc. She asks him if he loves her very quietly at one point in the light novel, and when he mishears her, she changes it to ask him if he loves the kids. She tiptoes a lot around really opening her mouth and saying things to him in OGC too — "Aerith would just come right out and say it," she says at one point. She gets resentful and irritable when he disengages from her, but she doesn't express those feelings well at all until the midpoint of Advent Children. They are terrible at communication, which is often blamed on Cloud but it's honestly both of them.
I think she sort of leaves him to his own devices by the canon point you're taking her from. She lets him come to his own conclusions in other words, and gives him a push (as she does in the movie) when necessary, but she's not often really forceful or angry or outwardly irritated with him. She definitely feels irritated and abandoned and all of those other negative feelings, but she keeps that sort of negativity out of things unless it rises to a boiling point, since she's only human. You'd have to be a saint to not get annoyed with Cloud sometimes. I'm of the belief that it's a combination of her disinclination to express herself, her fear that she'll push Cloud away entirely, and her overall concern for him that makes her treat him this way. She doesn't want to snap at him because she's worried and isn't really brave enough to face what might happen if she does, but it just builds up inside until her hand is forced, which turns out to work for the both of them.
In general, while she's kind and bright and optimistic, she tends to bottle up negative feelings, and sometimes spins them into something more comfortable. For example, she joins AVALANCHE because she's so angry and disillusioned with Shinra, but convinces herself that the things she does are out of altruism. Only when she's faced with the really terrible consequences of joining a terrorist group and has time to reflect on them does she realize what she was doing wasn't just out of the good of her heart — it was partially because she was so angry for so long and wanted justice.
She's a subtle character, personality-wise, so I'm sorry if this sounds kind of vague! If you want me to clarify or what have you, feel free to ask.

and lastly, when would she resort to physical combat?

As for why she's irritated, the light novel helps in explaining, here, but mainly she's confused and bothered by him suddenly disappearing on her and the kids. From her POV, she doesn't know about the Geostigma until later, so it just looks like he's packed up and gone with no real explanation. When she does find out, it's coupled with him basically admitting (without saying much) that he's going to die instead of fighting it. So that's hard for her to swallow. They've pretty much built a family and a life in the past couple of years, and for him to throw away his life is like throwing that away. She wants him to live and fight it, and having him say he's going to give up on himself is like a slap in the face. She's also frustrated that he keeps pushing everyone away despite wanting (and needing) other people. So she's irritated, but all of that irritation comes from a place of love.
As for how she'd behave toward him post-AC, that's up to you! They're both a little emotionally closed-off though, so I don't think it'd suddenly get lovey-dovey. She might be more honest with him, but that's dependent on the game you put her in, Cloud's canonpoint, etc. Just play it by ear.
I think she'd be way more interested in other people than telling her own story, for sure. Keep in mind she's been a bartender for a while too, and part of her job was probably being a good listener. She's intuitive and motherly also, so she wouldn't be pushy about sensitive topics. She's the sort of person that functions best taking care of other people, if that makes sense.
As for physical combat, that's also on a case by case basis, but I don't think she'd go in guns blazing. It'd probably be best to save it for when she feels she has to defend herself or another person.
