I'll start with Gregor since if I tl;dr about Gaius I'll probably be 150% more tempted to app him somewhere. It's a slippery slope.

Gregor's an interesting mix of being exactly what he seems like at first glance and having secret and/or hidden depths. The Gregor is swell sword, boisterous faux Russian who gets along with everybody thing? Totally legit. He's occasionally perverse. He's amiable. He's the sort of guy who'd get happily drunk at a party, drink other people under the table, and be the loudest and most boisterous. All of this is him.

But he also matched Basilio in a fight and was once a candidate to become the next khan of Regna Ferox. He had a brother who died whose name he ended up taking as his own. And he's got history with Minerva. Basically, you really need to read a lot of his supports because he's older, he's moved around a lot more than most of the other characters, and has seen and done a lot more as a result.

Something to keep in mind is that the stuff I mention in the first real paragraph would be the stuff that would follow an "At first glance..." in a personality section. He's also capable of being incredibly insightful and can read people pretty damn easily - he tells Panne, "Panne must learn to express feeling more. Is first step to intimacy. Holding anger inside and never learning to forgive? Very bad. Is reason why Panne has few friends." And there's a few other moments like that but I'm too lazy to trawl through and dig them up. But it's a balancing act. You don't want to veer too far into Gregor is boisterous Russian swell sword who has no cares in world nor do you want to veer too far into Gregor is secretly wise like Yoda and boisterous Russian swell sword act is only an act either.
