Doing an AU sort of thing would actually be great, both in terms of making the played characters fit the setting and the world itself diverge enough so that the game doesn't conflict too much with canon continuity.

There's a ton of stuff you can do with people. There's a need for scientists, technicians, etc just for the maintenance of the Jaegers and the study of Kaiju remains. There's also a few other things you can introduce as elements in the game. You can have more active and dangerous skin louse from the Jaegers for off-duty pilots to ward off and rescue teams to race against the clock to find survivors, something somewhat like Cloverfield and its own minor event for those that don't get to pitch in for Jaeger fights.

There's also a ton of potential with the Kaiju Blue; be it a toxin that needs to be cleaned/can be inflicted on the characters when a Kaiju falls too close to base, or the Blue itself doing something unexpected to the environment it inhabits (algae blooms, mutating animals, even creating minor monsters such as giant bugs, the sorts of little critters that tend to appear in classic Toho movies)

There's also a chance you can have characters that are working for the government in other branches, coming in for regular inspections and have to be beurocrats. You can also give characters the chance to run into Hannibal Chau, and maybe work with him or become one of his regular customers. If you set up in Hong Kong, you'll have a lot of access to the more richly established setting there. And as for the ethnicity of characters, it's a setting where the world governments are constantly working with one another in an organized fashion, so it wouldn't be too strange to see mix-and-match crews going around the world to be deployed closer to the fight. Australians aren't that far away so that can help account for the typical mix of Asian and White People you see in the majority of the demographic that is DWRP.

And if your game actually got fairly large, I could totally see a separate Shatterdome in Australia as completely viable. There'd always be planes, helicopters and ships that can transfer characters between each site depending on who's needed where (and where the players want to build CR) and while I would advise against a stereotypical DWRP network per se, I can see people being able to email one another and to have a public forum where they post notices (scientific findings, warnings about what's going on in the streets, call to assist for Kaiju Blue cleanup, etc).

And of course, if you do any custom designs for Kaiju or Jaegers, remember to have your designer take Del Toro's instructions to his designers to heart; the Jaegers and Kaiju can't be directly referencing any one anime and the Kaiju need to be designed with the man in the rubber suit in mind.

Oh, and remind those going in Jaegers that they need to be committed to fight logs! DWRPers can be bad about commitment to stuff (even I'm not an exception) so you need to give players that are repeat offenders a kick in the buns and reward the players who actually do put in the effort.
