There aren't many well known mecha series like that actually. And I find the rest of your comparisons funny because there's always ONE series as example of its genre. The "parent" so to speak.
All shonen comes from Dragon Ball, all magical girl comes from Sailor Moon. Yeah, you used it like sarcasm, but that's how it works. They put "the rules" of the genre.
There are three main mecha categories. Mecha vs Mecha at war, daddy there is Gundam. Mecha vs monsters without depth, aka "chokuzoka", that's Mazinger and all its cousins from the 80s. Eva can be good or bad in your opinion, but it marked a before and after in mecha series, and that's the third group and where Pacific Rim belongs to.
