i don't own a vita, sadly! which is kind of why i'm asking, haha. i have watched a few of the extra cutscenes and such in golden on youtube but i'm just wondering if anything else in there is really notable.

Not really. I mean, full disclosure, don't have a Vita so I could be missing some vital thing. That said, ski trips and the like aside nothing stands out as vital in Golden. Sure, there's Marie but she's not a thing in any other version...well, at least so far. I mean, Ema Skye seemed to be an one-off character and then came Apollo Justice, so I guess I wouldn't rule out her being a thing.

Or I guess to put it another way, I'd personally treat Golden as a sort of AU. If there's stuff you can easily incorporate that doesn't contradict the Yosuke from the PS2 version go ahead and do so, but some of the content doesn't show up in the anime, manga, or original game, so I'd hesitate to deem it the definitive version of P4 that you should aspire to play from.
