I'll start with the obvious. Death is a perky goth. You can make a decent argument for her being the quintessential perky goth. On one hand, she's got the goth trappings: is Death, dresses in black. But on the other hand, she's really damn nice, kind, and upbeat. When she visited Lex Luthor...actually, hold on. Let me see if I can find the link.

Which is kind of unimportant in the grand scale of things so I don't think you need to chase down these issues. Unless you like the art or are interested in it in general, in which case go ahead. I heard good things about Lex Luthor's time headlining Action Comics. (And yes, her cameo was Gaiman sanctioned to the best of my knowledge.)

But I linked to it because from what I remember while we do see her at work in the main comics we don't see it in depth like this, and the people she comes for don't necessarily ping as high on the evil-o-meter as Lex Luthor would. I mean, she comes for a cute little kind and of fucking course she's going to be super nice. But with someone like Lex? She's still flippant and fun. I think it's safe to say that while she'll make pointed comments the higher up you scale on the evil-o-meter and the like Death will still be fairly consistently nice.

That said, it's strongly hinted throughout the series that pissing her off would be an awful idea. Death's nice, but she's not a doormat.

I'd see it as life and mortals and things that come with expiration dates? She's compassionate and not necessarily judging. That's not her role. She welcomes everything at the beginning and she's there at the end. Will Death snark? Yeah, she might snark a bit (like when she offers to show Lex his life and says, "And it looks just like I thought it would...") but there's a difference between teasing someone and a sincere, "INSOLENT FOOL! I am DEATH and I shall judge thine worthiness!" Regardless of who she's meeting there's going to be this underlining compassion. Death spends a day mortal for a reason, and that reason is to keep in touch with the lives she collects. She's the only Endless who doesn't have a special style of speech bubble or lettering, after all: hers are the same as the humans in the series. (Destruction, while he does come close, has a bold outline.) She's in touch with mortality.

But to her family?

Is Death still nice? Yeah. But there's a difference between dealing with the shit of some mortal who will, as all things do, end up with her at the end, and dealing with the crap when her kid brother was a dick to her kid sister. Like, in Brief Lives:

DREAM: My sister? I stand in my gallery, and I hold your sigil. We should talk. Will you come to me?
DEATH: Hello, Lucien. How's the library?
LUCIEN: My lady. All goes well. I thank you for asking.
DREAM: My sister...?
DEATH: I'm not talking to you. Lucien, have you got anything with a happy ending? And nice people in it? Or funny animals?
LUCIEN: I...uh...my lady...whatever you, erm...anything you need...I...uh...
DREAM: You are not talking to me?
DEATH: That's not nice, sending him away like that. He was going to find me a book.
DREAM: And why are you not talking to me? Well, my sister?
DEATH: Because I'm mad at you. That's why I'm not talking to you.

Then there's a pause, after which she demands to know what Dream did to Delirium and she refuses to back down until he agrees to go talk to Delirium. And tells him that while she understands that things hadn't been easy for him and his latest girlfriend dumping him was hard he really shouldn't have taken it out on Delirium, kisses him on his cheek, sends him on his way. It's admittedly not her furious, and there's better examples of her being mad elsewhere. But it's still her calling out her brother's crap. You know. Being firm but compassionate. A cool big sister.

Random note: they all call her 'sister' or 'elder sister,' never Death. Take from that what you will.

Everyone else are mortals, they're her family. The biggest problem with them is how she'll interact with her siblings, but for the most part you won't have to worry about it since ha, where are you going to find a Destiny or Despair.

I'd also take notes from how she deals with Hob for how relationships with mortals would build up with her in general. Her omnipresence and general capabilities in regards to death won't be much of a thing in memes and PSLs, but would be more difficult if you tossed her into a game. But when you get to that point it's kind of up to you how you'd handle it.

Happens to the best of us. I didn't notice I typoed kid as kind until I came back for icons. Bleh. IJ also apparently broke in the meantime, which, not gonna lie, I find weirdly appropriate given what I was hitting it up for.
